Our extended fermentation period, often stretching beyond 80 hours, permits the development of those delicate esters and congeners that define the Lowland style. During these extra hours, complex chemical reactions occur at a gentler pace, producing fewer harsh alcohols and more of the fruity, floral compounds that characterise our spirit. The temperature control throughout this process requires constant vigilance—too warm, and we lose those subtle notes; too cool, and fermentation stalls entirely.

Our pot stills feature longer necks and more gradual angles, designed specifically to encourage reflux—the process where heavier, less desirable compounds condense and fall back into the still for redistillation.

The extended copper contact time removes sulfur compounds whilst preserving the lighter alcohols and esters that contribute to our whisky's renowned approachability. This conservative approach means we sacrifice quantity for quality, collecting perhaps 60-65% of each run compared to the 70-75% taken by many commercial distilleries. The result is a cleaner, more refined spirit that requires less aggressive maturation to reach its potential. Our stillmen rely not just on temperature and timing, but on their trained palates to determine the precise moment when the character shifts from desirable to excessive.
